In the old times in Ukraine semolina was extremely rare and expensive product.

Semolina of mark M has little white opaque grains. It is cooked quickly and provides maximum of volume increase. Semolina made of such groats is extremely tasty and useful. Semolina is made of central part of wheat grain. Its chemical composition is close to rice, but its protein content exceeds it. Digestibility of semolina is almost 100%, due to the unique composition it quickly sets up energy expenditure. These groats tend to be ready-cooked quickly and contain minimum amount of fibre, about 0.2%. Semolina contains proteins, starch, vitamins B1, B2, B6, E, minerals - potassium, calcium, sodium, magnesium, phosphorus, and iron.

Semolina is used not only for cooking semolina. It is widely used in culinary. It has been added when cooking soups, salads. People make pies, puddings, dumplings, cakes and many other dishes of national cuisine. Due to its high caloric value and almost complete absence of fibre semolina takes one of the main places in nutrition, is a great source of carbohydrates, and is easily digested and absorbed by the organism.

Semolina and macaroni semolina are received at mills by the use of sieving machines through cleaning (enrichment) and sorting intermediate products of wheat grain milling. Macaroni semolina is used to produce pasta.
